As a result of this thread and with thanks to the OP and responders, I learned a lot about Logitech rudder pedal drivers and calibration. More importantly for me while doing so, I discovered a fix for my constant drifting to the left while flying the JustFlight PA-28R and these pedals.

Had similar issues after running SU7. Rudder movement in the sim was lethargic. I would snap my CH Products rudder pedals from full left to right and in the sim, they would move the full range, but in their own sweet time. The lag made taxiing "interesting". I fixed it by deleting the rudder pedal profile and creating a new one. That sorted it out.

For the throttle, SimAppPro provides some functionality (like the display for rudder trim), but you’ll need to assign your buttons and axes manually in MSFS. Don't let that bother you though, it’s an excellent piece of equipment, a very nice upgrade from my Thrustmaster Airbus throttle.
